AUNT BEN’S PECAN-TOPPED SWEET POTATOES


A super yummy addition to Thanksgiving! Yes, we really do have an Aunt Ben.

AUNT BEN’S PECAN-TOPPED SWEET POTATOES
I got this recipe from Aunt Ben after she fixed it for Thanksgiving one year.  She said it is similar
to the one in “Pinch of Salt Lake”.  This is a very rich recipe.  I usually double or triple the amount
of yams and keep the other ingredients portions the same – and it tastes great.  It’s all up to you! -Spex
  • 3 cups cooked sweet potatoes mashed
  • 3 eggs, well beaten
  • 1/2 C cream
  • 1 Tbsp vanilla
  • 1 C sugar (I use brown sugar)
  • 1/2 tsp nutmeg
  • 1 stick butter
Mix well with beater until smooth and pour into casserole dish.

Topping:
  • 1/2 C brown sugar
  •  1/2 C flour
  • 1/2 stick butter
  • 1 C chopped pecans
Mix ingredients until grainy and distribute evenly over top of potatoes and bake 350 degrees for 30 minutes.
