STURT'S WINTER SALAD

This salad is so yummy!

The addition of pomegranate seeds makes it a perfect salad for Thanksgiving. Pomegranate seeds can be purchased already separated from the flesh of the fruit. It makes it so easy!
  • 1 head or package romaine lettuce
  • 1 head or package red leaf lettuce
  • 1 pomegranate (seeded)
  • 3 pears (cut into bite-sized pieces)
  • 1 avocado (cut into bite-sized pieces) – not part of her recipe, but it’s a good addition
  • 1 C walnuts or almonds (sugared)
  • 1 pkg Chevre goat cheese (not feta) (so soft you need to refrigerate then crumble into pieces)

 Dressing:
  •  ½ C olive oil
  • 3 tlbsp white wine vinegar
  • 3 tbsp lemon juice
  • 1 tsp grey poupon mustard
  • 1-2 cloves minced garlic
  • 1 tbsp sugar (I add more sugar so it’s not quite so tart)
  • S&P to taste
  • ½ tsp salt
Mix all dressing ingredients in a blender or shake in a jar.
