CORN DIP

Carrie & Spencer first tried this at the Brunt's home during their trip to watch the solar eclipse! So yummy!

CORN DIP
  • 1 onion, chopped and caramelized   
  • 2 tablespoons butter                                                            
  • 5 cups fresh corn (frozen can also be used)                                                                   
  • 1 cup mayonnaise                    
  • 1 cup Monterey jack or pepper jack cheese                                                                
  • 1 cup sharp cheddar
  • Salt, pepper and red pepper to taste   
Caramelize onion in a saucepan with butter. Once onions are caramelized add corn to saucepan and heat until the corn is cooked. Combine onion and corn mixture with all other ingredients and place in a 9x13 dish. Bake at 425 degrees until warm and cheese is melted and bubbly (roughly 15 minutes).
